Brings home all the flavours of the street food in the Far East of Singapore Malaysia and Thai cuisine, a true fusion of flavours adapted and integrated with all the influences of world food flavours
Relaunching my late grandmother's recipes was something I did with great enthusiasm but also with great responsibility as I set up the first culinary experience at my first Gastropub in 2008 serving Thai and Posh pub food moving then in 2016 to establish TANS restaurant in Lowestoft at the High Street with predominantly Thai food and the old favourites of Singapore like sambal Prawns and curry laksa noodles.
My grandmother's recipes ,like other family heirloom recipes are tried and tested and continue to be our family favourites which I bring home to Norwich this year at the Norwich Market as the MAMA BABA stall 79. The popularity of street food subsequently inspired me to open a more extensive repertoire of Singapore Malaysian Thai dishes at the MADDER KITCHEN in an informal cafe setting with alfresco dining weather permitting .
I try as best as I can to reproduce and revive these dishes as a snapshot of a Nonya woman's life during the early years of Singapore and reflect a segment of the Singapore culinary heritage as I remember from my childhood days.

One of Norwich’s most historic pubs has relaunched with a new name behind the bar and a revamped menu with a global feel. The Coach & Horses pub on Bethel Street is owned by leading pub retailer and brewer Greene King, but responsibility for the business now lies with its new licensee Anthony Munro.
